Healthy Protein Pumpkin Pancakes

Ingredients
- 2 T of gluten free or oat flour sifted
- 1/2 tsp of baking powder
- 1 scoop of vanilla protein powder
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp sea salt
- 1-2 T granulated sweetener of your choice- 2 egg whites
- 1/2 tsp of vanilla extract
- 1/4 cup pumpkin (not filling)
- 1/4 cup milk
Instructions
- In a large bowl sift the flour, protein powder, and baking powder. Then add in spices, sweetener, and salt. Mix Well!!
- In another bowl mix the egg whites with the vanilla extract.
- add liquid mixture to dry and mix until doughy
- add in pumpkin and SLOWLY add in milk 1 tablespoon at a time until batter is formed
Heat up your pan, spray with cooking oil
- pour in 1/4 cup serving of batter and cover
- flip when edges are golden brown and bubbles appear
- serve and top with your liking :)
